BACON WRAPPED STUFFED JALAPENOS (8-27-05) 9-10-05

24 medium jalapeno peppers
1 pound sausage, uncooked
2 cups shredded cheddar cheese
12 bacon strips cut in half

Slit peppers lengthwise about 1/4 inch deep and remove seeds. Combine sausage
and cheese and stuff into jalapenos. Wrap each with slice of bacon and secure
with toothpicks. Place on drip pan on grill. Grill over indirect heat for 15-18
minutes, turning occasionally until sausage is cooked. Grill over direct heat for
1-2 minutes until bacon is crisp.

GAMEDAY HEARTY MEXICAN DIP 9-10-05

1 pound lean ground beef
1 medium onion, finely chopped
1 3/4 cups mild picante sauce, or 1 can mexican style diced tomatoes
1 4 oz. can chopped green chili's
1 cup water, divided
1 2.75 oz. pkg. regular country gravy mix
1/2 16 oz. pkg. mexican cheese, cubed
1 tsp. ground cumin
1 tsp. finely chopped jalapeno peppers
chunks of french bread, tortilla chips or corn chips

In a 4 quart saucepan or dutch oven.  Cook and stir ground beef and onion until done. Drain and add picante sauce, green chili's and 1/2 cup water. Heat to boiling. Dissolve gravy mix in other 1/2 cup cool water. After dissolved, stir into boiling mixutre until slightly thickened. Reduce heat to low, stir in cubed cheese. Stir in cumin and peppers. Put in bowl and serve with chunks of french bread, tortilla chips or corn chips.

CORN AND BLACK BEAN DIP 9-10-05

1 can mexican corn, drained
1 can black beans, rinsed and drained
1 cup salsa
1 cup mayonnaise
1 cup sour cream
1 pkg. mexican shredded cheese
1 pkg. taco seasoning

Mix together refrigerate and enjoy.

REUBEN DIP 9-10-05

1 block cream cheese
1 can saurkraut, drained
1 small bottle western dressing
4-5 oz. chopped corned beef
1-2 cups swiss cheese
miniature rye bread for serving

Melt in crockpot and serve.

GERMAN LASAGNA (7-30-05) 9-10-05

3/4 cup butter/margarine
3/4 cup flour
1 tbsps. beef boullion granules
2 tsps. onion salt
2 tsps. pepper, divided
2 1/4 cups milk
1 14 oz. can chicken broth
1 pound smoked Kielbasa or polish sausage chopped
2 eggs
1 12 oz. carton
9 lasagna noodles, cooked and drained
1 16 oz. can sauerkraut, rinsed and squeezed dry
2 cups shredded monterey jack cheese

In saucepan, melt butter, stir in flour, boullion, onion salt, and 1 tsp. pepper. Stir
until smooth. Gradually stir in milk and broth. Bring to boil. Cook and stir 2
minutes or until thickened. Add sausage and heat through. Combine eggs, cottage
cheese and remaining pepper. Spread 1 cup sausage mix in greased 9x13 pan.
Layer 1/3 sausage mix, 1/2 cottage cheese mix and sauerkraut. 3/4 cup monterey
jack cheese. Repeat layers. Top with remaining noodles and sausage mix. Cover
and bake 350° for 50-60 minutes until bubbly. Sprinkle remaining cheese on top
and bake another 5 minutes or until cheese melts. Let stand 15 minutes before
serving.

MACARONI SALAD (7-16-05) 9-10-05

1 box macaroni small shells, cooked and blanched in cold water
4 hard cooked eggs, diced
1 medium onion, diced
1 green pepper, diced
1 cup celery, diced
1/2 pound longhorn cheese cut in cubes
1 box frozen green peas, cooked and blanched in cold water

Mix all and add 1/2 tsp. seasoned salt.

Dressing:

1 cup mayonnaise

ZUCCHINI BARS WITH CHOCOLATE CHIPS 9-10-05

1/2 cup margarine
1 1/2 cups sugar
2 eggs
2 cups flour
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. baking soda
1 tsp. vanilla
2 tbsps. cocoa
2 cups grated zucchini
1 cup chocolate chips

Cream margarine, sugar. Beat in eggs one at a time. Add dry ingredients, zucchini and chocolate chips. Spread into a greased and floured 9x13" pan. Can add nuts if you want. 1 tbsp. sugar sprinkled over the top. Bake at 350° for 30 minutes.

Tips, hints and helps: Use mini chocolate chips in your zucchini bread so they won't sink down into the bottom of the pan. 9-10-05

FRANK'S MACARONI SALAD 9-10-05

1 pkg. elbow macaroni
1 bottle creamy garlic dressing
meat and vegetables of your choice

Cook macaroni per directions, drain and put into bowl. Add dressing mix. Mix well and cover. Put in refrigerator for a few hours or overnight. Add chopped vegetables of your choice, cubed meat of your choice, cubed cheese. Add 1 pint sour cream and small amount of salad dressing to moisten.

CZECH RAISED DUMPLINGS  9-17-05

1 cup lukewarm milk
1/2 cake yeast
2 eggs, beaten
1 tsp. salt
app. 2 1/2 cups flour
2 slices toasted, buttered, cubed white bread

Stir all ingredients together. At the very last, add toasted bread cubes. Let mixture rise until doubled in bulk. Form into golf ball sized balls. Let rise a short time on floured board. Cook for 10-12 minutes in boiling water. Serve with roast duck.

Apple Dessert 9-17-05

1 bag roasted apples or cut up apples with cinnamon and sugar
1 yellow cake mix, per directions
1 box cook and serve vanilla pudding, put in with cake

In a greased 9x13 put apples oin bottom of pan, top with batter. Sprinkle cinnamon on top of the batter. 1/2 cup nuts if you like them. Bake for 35-40 minutes.

SIDE DISH CARROT SOUFFLE (7-19-03) 9-17-05

2 lbs. carrots, cooked and mashed
1 cup cracker or corn flake crumbs
1 cup milk
¾ cup grated sharp cheddar cheese
¾ cup soft butter
¼ cup grated onion
1 tsp. salt
¼ tsp. pepper
3 eggs

Combine all except eggs. Beat eggs until frothy and fold into carrot mixture. Pour into 10x6 dish. Bake at 350° for 40-45 minutes.

ZUCCHINI CASSEROLE WITH GROUND BEEF (requested, didn't give sep/oct92pg3) 9-17-05

2 large zucchini, peeled & sliced
2 lbs. ground beef
½ cup chopped onion
2 beaten eggs
2 cans tomato sauce
1 pkg. sharp Cracker Barrel cheese, cubed
1 cup cracker crumbs
½ tsp. salt
½ tsp. oregano
Mozzarella cheese, grated

Season and brown ground beef, drain. Combine zucchini and beef in a bowl. Add onions, eggs, sauce, cubed cheese, crumbs, salt and oregano. Pour into baking dish. Top with Mozzarella. Bake at 350° for 45 minutes.

OVERNIGHT COFFEE CAKE 9-17-05

Cream 1 cup white sugar
1/2 cup brown sugar
3/4 cup margarine

Add

2 slightly beaten eggs

Sift together

2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg

Mix together and add to creamed mixture. Add 1 cup sour cream. Add 1 cup nuts. pour into well greased 9x13" pan. Sprinkle topping on top.

1/2 cup brown sugar
1 tsp. cinnamon

Mix well.

Put in refrigerator overnight. Bake at 350° 35-40 minutes.

Tip, hints and helps: To remove lime build up from a teakettle: Boil ½ cup vinegar with a kettle full of water for five minutes or so. (may/jun78pg6 didn't give)  9-17-05
