SWEETENED CONDENSED MILK (same as Sweetened Condensed Milk w/o dry milk powder 4-29-00) 5-6-00 Top of page

1 cup milk
2/3 cup sugar
2 tbsps. corn starch
2 tsps. Margarine or butter

Combine all ingredients and cook until thick and smooth

COOKIES AND CREAM PIE 5-6-00

1 9" graham cracker crust
1½ cup milk
1 package instant vanilla pudding mix (regular or sugar free)
1 package 8 oz. Cool Whip® whipped topping
1 cup coarsely crushed Oreos® (reserve some for topping)

Mix pudding and milk for 1 minute and let set for 5 minutes. Fold in Cool Whip® and crushed Oreos®. Pour into crust and freeze at least 6 hours.

AMANA OX YOKE RHUBARB CUSTARD PIE 5-6-00

Makes 2 pies

10 ½ cups chopped rhubarb (or 5¼ cups strawberries and 5¼ cups rhubarb)
4½ cups sugar
9 eggs (beaten)
¾ cups half and half
3/8 tsp. salt

Make crust for 2 pies. Put bottom crust into pans. Sprinkle each crust with 1 tbsp. flour. Mix remaining ingredients and pour into crusts. Bake at 375° for 1½ hours or until set.

STRAWBERRY RHUBARB PIE (Country Magazine in '93) (5-12-99) same as Rhubarb-Strawberry Pie 5-6-00

1 egg
1 cup sugar
2 tbsps. flour
1 tsp. vanilla
3 cups rhubarb, chopped
1 pint strawberries, sliced
9 inch pie shell

Beat together the egg, sugar, flour and vanilla. Add rhubarb and strawberries; mix well. Put in pie shell.

Topping:

¾ cup flour
½ cup brown sugar
½ cup oatmeal
½ cup margarine

Mix ingredients until crumbly; sprinkle on top of pie. Bake on lower rack in oven at 400° for 10 minutes. Move pie to middle rack, reduce heat to 350° and bake for 35 minutes.

MOCK APPLE PIE (may63pg2) 4-30-99

Boil together:

1 ½ cups water
1 ½ cups white sugar
1 ½ teaspoons of cream of tartar
16 soda crackers, broken into large pieces (to resemble apple slices)

Boil together till soda crackers look clear. Pour boiling mixture into unbaked pie shell. Top with butter or cinnamon. Add top crust and bake same as apple pie.

THE CHOCOLATE CHIP COOKIES (6-25-99) 5-6-00

1 stick butter
12 ozs. chocolate chips
3 eggs, slightly beaten
½ cup sugar
2 tsps. vanilla
1½ cups flour
½ tsp. baking soda
Pinch of salt
18 ozs. white chocolate chips
1 cup chopped nuts

In a saucepan, melt butter and 12 ozs. chocolate chips, stirring often. Stir in eggs, sugar and vanilla; mix well and set aside. In a large bowl, combine flour, baking soda, salt, white chocolate chips and nuts; mix well. Pour first mixture over second; stir to combine. Chill dough in refrigerator. Put on ungreased cookie sheet and bake at 350° for 12-14 minutes. Cookies can be frozen.

RHUBARB STRAWBERRY PIE (Joanna Lund) 5-13-00 Top of page

1 9" graham cracker crust
2¼ cups water
1 4 oz. pkg. jello sugar free strawberry
1 4 oz. pkg. vanilla cook and serve pudding
4 cups chopped rhubarb
1 4 oz. pkg. non fat sugar free instant vanilla pudding
2/3 cup dry milk powder
½ cup cool whip lite

In a medium saucepan combine 1 cup water, dry jello, dry cook & serve vanilla pudding. Mix in rhubarb. Cook until the rhubarb is soft and sauce thickens. Remove from heat and let stand 5 minutes till cool. Pour into crust. Chill 2 hours in refrigerator till set. In a medium bowl combine instant vanilla pudding, dry milk powder and remaining 1¼ cup water. Mix well. Fold in the cool whip. Spread pudding mixture over rhubarb mixture. Refrigerate at least 40 minutes.

PICTURE PERFECT STRAWBERRY PIE 5-13-00

1 graham cracker crust
1 qt. strawberries, sliced or leave whole
1 cup sugar
1 cup water
3 tbsps. corn starch
1 small box strawberry regular jello

Arrange strawberries in crust. Combine the sugar, water and corn starch in a saucepan. Bring to boil and cook till thick and clear. Remove from heat and let cool to room temperature. Pour over strawberries and coat berries well. Chill 2 hours in refrigerator.

SLOPPY JOES TO DIE FOR (10-5-99) 5-13-00

1½-2# ground beef
2 tbsps. catsup
3 tbsps. mustard
1 tbsp. pickle juice
1-2 tbsps brown sugar
dash of salt and pepper

Brown the meat and drain. Add the rest let simmer 10-15 till hot.

FROSTING FOR PRINCESS DIANA'S WEDDING CAKE (2-18-00) 5-13-00

8 oz. pkg. cream cheese
¼ cup oil
1 tsp. vanilla
3 cups powdered sugar

Mix oil and vanilla into cream cheese. Add powdered sugar. Mix well.

MAID RITES (5-13-00 from Maid Rite restaurant) 5-13-00

2 lbs. ground beef
1 tsp. pepper
1½ tsps. salt
1/3 cup flour
1/8 tsp. each, onion salt, garlic salt, thyme and celery salt

Mix together dry ingredients and add ½ cup milk. Add beef and mix by hand. Cook in a double boiler stirring every 5 minutes till done.

MAID RITES (5-13-00 from Muscatine) 5-13-00

1 lb. hamburger, browned
add onion to taste
1 bouillon cube, beef or chicken
2 tbsps. brown sugar

Cover with root beer and cook till root beer evaporates.

OREO COOKIE DESSERT #3 (5-29-99) 5-13-00

1 regular size package Oreo Cookies, crushed
¼ cup butter, melted
8 ounce carton Cool Whip
1 can (8 ounce) chocolate syrup
½ gallon Vanilla ice cream

Slice ice cream 2" thick lay on top of crust. Crush cookies and mix with melted butter. Reserve ¼ cup for topping. Pat evenly over bottom of 9" by 13" pan. Pour chocolate syrup over ice cream. Spread Cool Whip evenly on ice cream. Sprinkle remaining crumbs over all. Freeze. Cut into squares when ready to serve. Keep leftovers frozen.

COOKIES & CREAM PIE (5-6-00) 5-13-00

1 9" graham cracker crust
1½ cup milk

ANGEL FOOD CAKE GLAZE (4-29-00) 5-20-00

½ cup + 1 tbsp. sugar
3½ tbsps. Half 'n Half
¼ cup margarine
¼ tsp. vanilla
¼ tsp. lemon extract

Bring the sugar, Half 'n Half and margarine to boil and boil hard for 1 minute. Add flavorings and cool.

YANKEE RHUBARB UPSIDE DOWN CAKE 5-20-00

5 cups diced rhubarb, can use ½ strawberries
¾-1 cup sugar
1 3 oz. pkg. strawberry Jello
3 cups mini marshmallows
1 yellow cake mix, prepared to box directions

In a greased 9x13" pan add in layers, rhubarb, sprinkle over dry jello, mini marshmallows. Add the cake mix that has been prepared to package directions. Bake 350° 50 minutes. Cool for ½ hour. Loosen edges. Turn over on a cookie sheet. Serve with cool whip.

2# ground beef, browned in a skillet and drained. Add 1 can Campbell's condensed onion soup. Add some flour to thicken.

MR. DELL'S POTATO CASSEROLE (mar/apr85pg2) 5-20-00

1 (32 ounce) package Mr. Dell's hash browns
½ cup + 2 tablespoons butter or margarine
1 cup cream of chicken soup
½ cup milk
½ cup green onions, chopped
2 cups cheddar cheese, grated
1 cup crushed corn flakes
1 pint sour cream

Preheat oven to 350°. Melt butter. Pour into a 9 x 12 inch baking pan. Add half package of hash browns. In a separate bowl mix soup, sour cream, milk and green onions. Pour half of mixture over hash browns. Sprinkle 1 cup grated cheese on top. Add remaining hash browns. Add remaining soup mixture on top. Sprinkle remaining cheese on top. Cover with crushed corn flakes. Pour 2 tablespoons melted butter over mixture. Bake 45 minutes.

THOUSAND ISLAND DRESSING FOR LETTUCE (jan/feb98pg5) 5-27-00 Top of page

1 cup mayonnaise
2 tsps. chili sauce
2 tbsps. chopped stuffed olives
2 tbsps. minced onion
2 chopped hard cooked eggs
½ tsp. paprika
salt and pepper to taste

Mix and pour over salad.

YANKEE RHUBARB UPSIDE DOWN CAKE (5-20-00) 5-27-00

5 cups diced rhubarb, can use ½ strawberries
3/4-1 cup sugar
1 3 oz. pkg. strawberry Jello

GREAT PUMPKIN SPICE CAKE (nov/dec93pg1) 5-27-00

1 pkg. spice cake. dry
1 30 oz. can pumpkin pie mix. as is do not mix anything in
1/3 cup water
2 tsps. baking soda
2 eggs

Dissolve soda in water Combine ingredients and pour in a greased 9" x 13" pan. Bake at 350° for 45-50 minutes or till tests done.

Topping: 8-10 ozs. whipped topping
1/3 cup brown sugar
1 tsp. vanilla

Combine. frost and refrigerate.

BBQ CHICKEN 5-27-00

¾ cup chopped onion
¼ cup salad oil
1¼ cup catsup
1 tbsp. vinegar
3 tbsps. sugar
1 tbsp. WOR sauce
2 tsps. mustard
2 tsps. salt
½ tsp. pepper
chicken pieces

Mix all ingredients except chicken and simmer 5 minutes. Pour over chicken and bake 350° 45-60 minutes.

MOIST BRAN MUFFIN (NO EGGS) 5-27-00

½ cup all bran
½ cup milk
2 tbsps. vegetable oil
½ cup flour
2 tbsps sugar
1 tsp. baking powder
¼ tsp. salt

Combine bran and milk and let set 5 minutes. Stir in the oil. Combine and add the rest of the ingredients. Fill greased or paper lined muffin cups ½ full. Bake 400° 18-20 minutes. Cool 5 minutes before removing from pan. Makes 4 muffins.

RHUBARB-STRAWBERRY PIE (same as STRAWBERRY RHUBARB PIE (Country Magazine in '93 5-12-99) 5-27-00

single pie crust, 9"
2 tbsps. flour
1 cup sugar
1 egg
1 tsp. vanilla
3 cups chopped rhubarb
1 pt. sliced strawberries

Beat together flour, sugar and egg . Add rhubarb and strawberries. Mix well. Put into crust.

Topping:

¾ cup flour
½ cup brown sugar
½ cup oatmeal
½ cup margarine

Mix till crumbly and put on top pie filling. Bake 400° 10 minutes on lower rack then 350° for 35 minutes on middle rack.

EASIER RHUBARB DESSERT 5-27-00

5 cups rhubarb, cut-up
1 cup sugar
(3 oz.) box strawberry Jello or raspberry
1 cups mini marshmallows
1 yellow cake mix
1 stick margarine, cup up or melted
1 cup hot water

Grease and flour a 9x13" pan. Put rhubarb in and add marshmallows. Sprinkle dry Jello on top. Mix cake as usual and pour over first three ingredients. Bake at 350° for 40-45 minutes.

STAINED GLASS COOKIES (jan/feb94pg4) 5-27-00

2¾ cups flour
½ tsp. baking powder
½ tsp. salt
2 sticks butter, softened
2/3 cup sugar
2 tsps. egg (half a large egg, lightly beaten)
1½ tsps. vanilla extract
1/8 tsp. lemon extract
1 cup assorted sour ball candies

Whisk together first 3 ingredients. Set aside. Cream butter and sugar until fluffy Add extracts and egg. Beat until blended. At low speed, gradually beat in dry ingredients until dough can be gathered into a ball. Form dough into large, flat disk, wrap in plastic wrap, and refrigerate at least 30 minutes, but no longer than 3 hours. Line cookie sheets with aluminum foil, and lightly butter the foil. Separate candy into colors, and pulverize. Keep each color separate. Using ¼ of the dough at a time, roll to 1/8" thickness between two sheets of plastic wrap or a lightly floured board. Cut out with 3" cookie cutter. Transfer to cookie sheets. Cut out shapes for the stained glass with small cutters or a small, sharp knife. Use tip of small knife to fill the holes with candy pieces, filling just to the top of the dough. Brush away excess candy. Bake in pre-heated 350° oven 10-12 minutes until cookies are lightly browned and the candy has melted. (Watch carefully at the end so that candy does not caramelize and turn brown.) Cool on sheets and remove.

RHUBARB UPSIDE DOWN CAKE 5-27-00

1 Duncan Hines Yellow cake mix
2 cups rhubarb cut in ½"-1" pieces
1 cup strawberries, sliced
½ cup sugar
1 small box red jello, dry

Mix sugar, rhubarb, strawberries and let sit for few minutes; pour into buttered 9"x13" pan. Sprinkle dry jello over rhubarb mixture. Mix a Duncan Hines Yellow cake mix, per directions. Pour over rhubarb mixture. Bake for 40-60 minutes hour 350°. Let sit for 10 minutes before turning onto plate or cookie sheet.
